- 6 Large eggs
- 1/4 cup Mayonnaise
- 1 tablespoon Mustard (yellow or Dijon)
- Salt, to taste
- Black pepper, to taste
- 1/4 cup Celery, finely chopped
- 2 tablespoons Green onions, chopped
- 1 tablespoon Fresh dill, chopped (optional)
Instructions
- Boil the eggs: Cover eggs with cold water in a pot. Bring to a boil, cover, and let sit for 12-14 minutes.
- Cool eggs: Immerse in cold water or an ice bath. Peel under running water.
- Prepare the egg salad: Slice boiled eggs into a bowl, mash to desired consistency, mix in mayonnaise and mustard, season with salt and pepper, and fold in celery and green onions. Add dill if using.
- Serve: Enjoy on whole-grain bread or in lettuce wraps.
