Deliciously fluffy muffins made with ripe bananas and wholesome oats, perfect for a healthy breakfast or snack.

Ingredients

  • 2 cups rolled oats
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas until smooth in a large mixing bowl.
  3. Combine rolled oats, applesauce, almond milk, baking powder, baking soda, cinnamon, and salt in the bowl with the mashed bananas, mixing well to achieve a homogenous batter. Fold in walnuts if using.
  4. Line a muffin tin with paper liners and pour the batter into each cup, filling them about ¾ full.
  5. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Allow muffins to cool before serving.
