Instructions
- Preheat your oven to 425°F and grease your baking sheet.
- Peel and dice your beets into half-inch cubes.
- In a bowl, toss beets with olive oil and sea salt.
- Spread beets on the baking sheet evenly.
- Bake until they’re soft, about 20 to 30 minutes, stirring halfway.
- Combine balsamic vinegar and honey in a bowl while the beets roast.
- Once soft, drizzle the mixture over the beets and stir to coat.
- Return to oven for another 10 minutes, stirring halfway.
- Remove from the oven and enjoy warm or store for later.
