Delicious and crispy Baked Zucchini Cheese Bites are the perfect snack! With a blend of cheese, breadcrumbs, and zucchini, they’re full of flavor and easy to make.

Ingredients

  • 2 Medium Zucchinis, grated
  • 1 Cup Shredded Cheese (Mozzarella or Cheddar)
  • 1/2 Cup Breadcrumbs
  • 2 Eggs
  • 1/4 Cup Grated Parmesan Cheese
  • 1 Teaspoon Garlic Powder
  • Salt and Pepper to taste
  • Olive Oil for greasing

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking sheet with olive oil.
  2. In a large bowl, combine the grated zucchini, shredded cheese, breadcrumbs, eggs, parmesan cheese, garlic powder, salt, and pepper. Mix well until uniformly combined.
  3. Shape the mixture into small balls or patties and place them on the greased baking sheet with space between each.
  4. Bake for 20-25 minutes or until golden brown and crisp. Let them cool slightly before serving.
