- 1 cup Cottage Cheese
- 4 Large Eggs
- ½ cup Parmesan Cheese
- 2 tablespoons Fresh Chives
- 1 teaspoon Garlic Powder
- 1 teaspoon Paprika
- 1 cup Bell Peppers (chopped)
- 1 cup Spinach (chopped)
- ½ cup Sun-Dried Tomatoes (chopped)
Instructions
- Preheat your oven to 375°F (190°C) and prepare a large bowl for mixing.
- In the bowl, combine cottage cheese, eggs, Parmesan cheese, chives, garlic powder, paprika, salt, and pepper. Mix well.
- Gently fold in chopped bell peppers, spinach, and sun-dried tomatoes.
- Grease a baking dish and pour the mixture in, spreading evenly.
- Bake for 30 to 35 minutes until the center is set and the top is golden brown.
- Allow to cool slightly, slice into squares, and serve warm.
Notes
Feel free to add other vegetables like zucchini or kale for variety. Top with fresh herbs or spices to enhance flavor.
