- 2 cups Rolled Oats
- 2 ripe Bananas (mashed)
- 1 cup Milk (or dairy-free)
- 1 cup Fresh Blueberries
- 1/4 cup Honey
- 1 teaspoon Vanilla Extract
- 1 teaspoon Baking Powder
- 1/2 teaspoon Salt
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, combine rolled oats, mashed bananas, milk, honey, and vanilla extract.
- Add baking powder and salt, then mix thoroughly.
- Gently fold in the fresh blueberries.
- Pour the mixture evenly into muffin cups, filling each about 3/4 full.
- Bake for 20-25 minutes until the tops are golden and a toothpick inserted comes out clean.
- Allow to cool before serving.
Notes
These oatmeal cups can be enjoyed warm or refrigerated for easy access during the week. They also freeze well for up to 3 months.
