  • 2 ripe Bananas (mashed)
  • 1 cup Milk (or dairy-free)
  • 1 cup Fresh Blueberries
  • 1/4 cup Honey
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, combine rolled oats, mashed bananas, milk, honey, and vanilla extract.
  3. Add baking powder and salt, then mix thoroughly.
  4. Gently fold in the fresh blueberries.
  5. Pour the mixture evenly into muffin cups, filling each about 3/4 full.
  6. Bake for 20-25 minutes until the tops are golden and a toothpick inserted comes out clean.
  7. Allow to cool before serving.
