1 cup quinoa, rinsed
2 cups water
2 medium apples, diced
1/2 cup dried cranberries
1/2 cup candied walnuts
1/4 cup maple syrup
2 tablespoons Dijon mustard
2 tablespoons olive oil

Instructions
- Rinse the quinoa:Rinse 1 cup of quinoa thoroughly under cold water to remove any bitterness caused by saponins.
- Cook the quinoa:Combine rinsed quinoa with 2 cups of water in a saucepan. Bring to a boil, reduce to low heat, cover, and simmer for about 15 minutes until fluffy. Let cool slightly.
- Chop and prepare ingredients:Dice 2 medium apples. Measure out 1/2 cup dried cranberries and 1/2 cup candied walnuts.
- Mix the salad base:In a large bowl, combine the cooled quinoa, chopped apples, cranberries, and walnuts.
- Make the dressing:Whisk together 1/4 cup maple syrup, 2 tablespoons Dijon mustard, and 2 tablespoons olive oil. Add salt and pepper to taste.
- Combine and serve:Pour the dressing over the salad and toss gently. Serve immediately or chill for a more refreshing version.
Notes
Try using Honeycrisp or Fuji apples for the best sweetness.
Optional: Add feta, roasted sweet potatoes, or microgreens for extra flavor.
Store dressing separately if preparing ahead to avoid sogginess.
