1 cup quinoa, rinsed

2 cups water

2 medium apples, diced

1/2 cup dried cranberries

1/2 cup candied walnuts

1/4 cup maple syrup

2 tablespoons Dijon mustard

2 tablespoons olive oil

Instructions

  1. Rinse the quinoa:Rinse 1 cup of quinoa thoroughly under cold water to remove any bitterness caused by saponins.
  2. Cook the quinoa:Combine rinsed quinoa with 2 cups of water in a saucepan. Bring to a boil, reduce to low heat, cover, and simmer for about 15 minutes until fluffy. Let cool slightly.
  3. Chop and prepare ingredients:Dice 2 medium apples. Measure out 1/2 cup dried cranberries and 1/2 cup candied walnuts.
  4. Mix the salad base:In a large bowl, combine the cooled quinoa, chopped apples, cranberries, and walnuts.
