- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- 2 large eggs, room temperature
- ¾ cup granulated sugar
- ½ cup brown sugar
- ½ cup vegetable oil (or melted butter)
- ¾ cup buttermilk
- 2½ cups diced apples
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Peeled and diced apples into small cubes, tossing with a tablespoon of lemon juice.
- In a large bowl, whisk together the eggs, granulated sugar, brown sugar, vegetable oil (or melted butter), and buttermilk.
- In a separate bowl, sift together the dry ingredients: flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
- Gently pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples.
- Pour the batter into the prepared pan and spread evenly, tapping it gently on the countertop.
- Bake for 35-40 minutes until a toothpick comes out clean or with a few moist crumbs.
- Let the cake cool in the pan for at least 20 minutes before serving. Add glaze if desired.
Notes
Serve warm or at room temperature, excellent with vanilla ice cream or whipped cream.
